Since that variant cover was already released to the wider market last year, I can think of different factors:
It could feel outdated to include a year-old comic in this year's subscription kit.It wouldn't be as special, as it'd just repurpose an existing comic you can probably find in the aftermarket for cheap. The comics included in the subscription kit feature tailor-made variant covers, which is an incentive since they are rarer than any variant you can find in a comic shop. They would need to reprint the issue this variant came with, with a relatively low print run. Since the comics the kit comes with are recent, they most likely already set apart a batch at the printers to be given the Marvel Unlimited variant while printing the regular and all the other existing covers.
That being said, I think they could still play better into the motif. Maybe include a new variant cover also featuring Knight-Spider? But at the same time, everything else in this kit is Wolverine-themed (though, honestly, the figure itself is the odd one out in that regard).
I hate that I like this figure as much as I do, it's just so dumb fun, I really am sad it's locked away behind a 100 dollar subscription, and this isn't worth me spending a 100 on, but I just like this, it's Moon Knight, it's Spidey its a thing I wish I could pretend doesn't exist so I'm not bummed out about not having it.
